Martha never fails to bring it home for me in the kitchen.
Last night we had Salmon grilled on the BGE, Â and a most delicious
corn salad. Â Here is the recipe with my adaptations. Instead of
olive oil and lemon juice, I sprinkled WHITE Balsamic vinegar
into the salad & hit the fridge while the salmon was cooking.
Summer Corn Salad
4 ears corn( I used bi-color) cooked, then cut off the cob
2 ripe avocados chopped
1 purple onion chopped
1 cucumber chopped
1 tomato chopped
Combine the above and add white Balsamic vinegar to taste.
There was enough left to have with chopped lettuce tomorrow night.
Next time I’ll toss in a minced hot pepper.
