We have many traditions at our house that sometimes I take for granted. Balloons on special days, blueberry pound cake for the 4th of July, and food that welcomes us home. Last Tuesday Sam returned from over a week at Disney World. He requested shepherds pie for supper. A week later, Sam returns from California and guess what? Â Yes, shepherds pie. So there must be something good about this easy comfort food . My friend, Neisha, has a creamier version which is good too, but here is how I do it.
Ingredients
1.5 lbs ground round
1 medium onion chopped
smidge of minced garlic to taste
3 c. Â or so Mashed potatoes (make your own or buy already prepared)
Finely shredded cheddar cheese/Mexican shredded cheese (both if you have)
1 can LeSueur peas
Directions
Preheat oven to 375 degrees.
Brown ground round and chopped onion in saute pan, add garlic. Drain and place in oven safe casserole dish. Add can of LeSueur peas, then spread dollops of mashed potatoes on top. Sprinkle with cheese. Bake at 375 degrees for about 20 minutes or until cheese is melted and dish is steamy.

Comfort foods and traditions …..Daddy’s Pimento Cheese (always made Pimento Cheese sandwiches for the trip to Charleston), Daddy’s slaw (wonderful by itself or great on hot dogs) , Chex Mix – this is a Holiday Tradition. I just recently made the gluten free version to take to Virginia for Christmas in July. Spaghetti on Saturday nights at the smith house. Daddy’s apple strudel! My dad loved to whip up delicious things in the kitchen! Fudge that my Mother would make for us on Valentine’s Day.
